Oven Bake Trout Recipe
1. Preheat the oven to 375ºF.
2. Cut a sheet of foil that is large enough to wrap the trout fillet very well.
3. Place trout on prepared baking sheet and use paper towels to pat the fish dry. season the trout with any herbs you have on hand, such as parsley, dill, or oregano. And of course, let’s not forget salt, black pepper, some garlic, and red crushed pepper.
4. To avoid the fish from becoming dry, melt some butter in the microwave or on the stove and drizzle it over the trout until evenly coated.
5. Fold the sides of the foil over the trout. Bake for about 13 minutes. The cooking time will depend on the size of the trout fillet. Open the foil, and broil for 3 minutes. Done!
Grilled Trout
1. Prepare your grill for direct high heat, with half of the grill cool.
2. Make a "boat" with heavy duty aluminum foil. Double the layer the foil and make a 1-inch rim around the edges. Coat the bottom of the foil generously with olive oil so that the trout does not stick while it is cooking
3. Rinse the trout with water and pat them dry with paper towels. Open up the fish and sprinkle with salt and pepper. Add lemon slices to the inside of the fish in a single layer. Top with sprigs of dill and pads of butter. Close the fish over the ingredients. Brush both sides of the fish with olive oil. Place fish in the foil boat.
4. Place fish boats on the hot side of the grill. Cover and let cook for 3 minutes. The oil and the juice from the fish will get bubbly. Move to the cool side of the grill. Cover and cook for an additional 3-5 minutes. You can peek inside the fish to check if fully cooked. Once opaque, the fish should be removed from the grill and served.
Pan Fried Trout
1. Pat the fish fillets dry with paper towels
2. Sprinkle trout fillets with salt and pepper, paprika and garlic powder.
3. Dredge the trout in the flour by pressing it down on both sides and shaking any excess flour off. This thin coating of flour protects the fish from burning in the pan and creates a wonderful texture without making the trout taste battered and fried.
4. Heat a large cast iron skillet or other nonstick pan over medium high heat and melt a little butter with olive oil in it. When the butter is melted, lay the trout fillets skin side down in the pan and cook for about 3-5 minutes, carefully flip with a thin wide spatula and cook on the other side for another 3-5 minutes until golden brown. Opaque and the fish flakes easily with a fork. Serve with lemon wedges for squeezing over the top of your pan fried trout.
